Salmon or other fresh fish, 6-8 oz per serving
1 lotus leaf for every two servings
Fresh mango salsa
Preheat oven to 350F. Place fish in the center of the lotus
leaf, spoon salsa over the top, wrap in the leaf, secure with
twine. Bake 30-40 minutes depending on the thickness of the fish.
Slice and serve with additional salsa. The lotus leaf is quite
tasty itself. |
Fresh Mango Salsa
1 mango, peeled and chopped
1/4 each red and green pepper, diced
1 green onion, diced
Brown mustard, all-purpose seasoning, fresh lime juice to taste
Mix together and chill for several hours or longer so the
flavors meld. |
