Bean Sprout & Lotus Tuber
Stir Fry
With Crispy Bacon

For those less health conscious but into taste!

1/2 pound of bean sprouts
1/2 pound lotus tuber - cut into thin strips 2" long and 1/8" thick.
10-20 sprigs of chives - discard pointed ends and roots. Cut into strips 2" long.
4 red chilies if you like - cut diagonally into thin slices.
1 clove of garlic, finely chopped.
A few sprigs of spring onions cut to 2" strips.
6 rashers of streaky bacon or more if you like crispy bacon.

Slowly fry bacon until crisp and remove from oil. Do not discard the oil. Break the crispy bacon into tiny bits by putting it between kitchen towels and rolling with a rolling pin. Crispy bacon will be used as garnish

Using high heat:

Heat bacon fat till smoking and add garlic, stir fry for 20 seconds. Add lotus tuber strips and stir fry 30-45 seconds. Add bean sprouts and stir fry 30 seconds or until the bean sprouts just change color (white to translucent). Add chives and stir fry 15 seconds. Add chilies and stir fry 15 seconds. Dish out onto serving plate, add a dash of pepper and cover with bacon & spring onion garnish. Serve. Use soy sauce if not salty enough, though the bacon will make it quite salty.
